*Prices are based on hanging carcass weight. Carcass weight is the weight of the beef once the hide, head, hoofs and organs have been removed. Carcass weights vary between 600 - 800 lbs on average. The cost for the beef is $6.00 per pound, hanging carcass weight. A 600 lb carcass would cost $3,600.00 ($6.00 x 600 = $3,600.00) A 750 lb carcass would cost $4,500.00 ($6.00 x 750 = $4,500.00) The net yield varies from animal to animal, usually 60% - 65% on fat cattle and up to 70% on leaner cattle. Grass fed Angus Cattle tend to be more leaner so you end up with more marbled beef than other breeds of cattle. At the time of ordering your beef we require a deposit of 50% of the lightest weight of the quantity you are ordering. For example if you are ordering a quarter beef, a non-refundable deposit required is $450.00. If the whole beef hanging weight is 700 pounds, then you are paying for a quarter of that which is 175 pounds. (700 x .25 = 175) Your total would be $6.00 x 175 = $1,050.00. Deduct your deposit of $450.00 and your balance due upon completion is $600.00. Cancellation of custom cut orders after beef has been cut are subject to a recutting fee of .50 per pound.
