It’s been at least 20 years since cattle were harvested locally for the retail of USDA inspected beef. At one time, Florida was one of the top producers of beef in the country. However, because Florida cattle lacked quality genetics and ranches lacked good soil and quality grass, the beef lacked tenderness, quality and taste. The beef from western states, where corn was abundant, became the popular meat to eat. Amazingly, it’s cheaper to ship cattle out west, than to bring the grain into Florida. Therefore, the majority of Florida cattle are sold at auctions, then stacked into tractor trailers and shipped out west to be “finished” and produced into most of the meat we eat
